Paradigmatic Xarel·lo

If you want to get to know the characteristics of the Xarel·lo variety, you can't do much better Aspriu Xarel·lo from Celler Pardas. This is a big and bold white wine, and I guess it will age well for quite a few years more. The 2013 vintage has plentiful freshness and complexity. The nose has the fruity, floral and mineral notes typical of the variety. The palate is huge, fresh, and with good acidity -- the flavours keep expanding in the mouth, and it has a very long finish. My tip: don't serve it too cold (definitely not from an ice bucket!) to enjoy the full range of flavours -- it will still have lots of freshness.
