In Montilla-Moriles, Andalusia, Spain, there is a storied winery called Alvear. It was founded at the beginning of the 20th century and has a long history of making excellent wines from the Palomino vine. The winery is well known for its classic solera-produced sherry-style wines.

Sherry has been made for generations using the solera system, a technique for maturing and combining wine.
