The wine
In 1729, Don Diego de Alvear y Escalera founded the oldest winery in Andalusia in Montilla Alvear. The winery has been managed by eight generations, each of which has contributed to its technological modernization and to the preservation and enhancement of the Pedro Ximénez variety. The wine is aged in American wooden barrels with the use of the so-called criaderas y soleras method, traditionally used in Andalusia. The Pedro Ximénez grape is very rich in natural sugars and allows the wine to reach fifteen degrees without adding alcohol.
