The wine

"La Bota de" is a numbered series of wines from Jerez and Montilla, distinguished by their age and exceptional quality. These are wines of great complexity and finesse, matured in some of the region’s most prestigious bodegas. Run by Jesús Barquín and Eduardo Ojeda, two fervent admirers of distinctive fortified wine, Equipo Navazos carefully selects, reserves and then bottles the successive editions. Dated releases ensure that an outstanding array of the finest sherry is continually available to a growing number of appreciative consumers.

Edition number 15 of this series is a newly bottled release, extracted during the spring and summer of 2008 from soleras of Fino that originated in the Pago de Macharnudo Alto vineyards, boasting a highly-favoured terroir and located to the north of Jerez, which have belonged to Bodega Valdespino for centuries.

Equipo Navazos chose some 20 butts from among the 69 comprising the solera with the oldest, most intense Fino belonging to the cellars of the legendary Bodega Valdespino. Following an old traditional method, their Finos are allowed to ferment in the butts where they will complete their biological ageing process under a film of yeast or flor. For this blend, a fine example of the solera system or fractional blending, a careful selection has been added from several butts of two ‘criaderas’ (tiers) immediately younger in age, in which the Fino is at its peak of maturity and so reveals a wonderful exuberance and pungency on the nose.

La Bota de Fino 15 is a wine for connoisseurs. It was bottled without filtering, in order to preserve its intense colour and vibrant character, and is completely ready to be enjoyed on release. However, it will still give enjoyment after a period of time, with further evolution in bottle and the careful attention to storage that its exceptional quality deserves.

NOTE: It can be served chilled at about 9-10º for a light and refreshing drink, or at around 13-14º to appreciate fully its complexity of aromas and flavour.

Ideal as an aperitif, along with olives, dried fruit and Iberian ham; also with seafood and fish, especially good with salty flavoured foods (anchovies), snails, lamb with garlic, tuna sushi, pork dishes, crudités with vinaigrette or pickled vegetables, and cold soups (gazpacho).

Matured over an average of 10 years.
