The wine

El El Perro Flaco Verdejo is produced by Álvarez y Díez, selected by Moacin Wines. The winery owns 100 hectares of vineyards. The soil composition plays a key role, promoting good aeration and drainage during rainy periods, while the underground clay retains moisture reserves in years of scarcity. The climate and terroir also leave their mark, which is ultimately reflected in the finished wine. The sharp temperature contrasts between day and night result in an excellent sugar-acidity balance. To make this wine, the grapes are destemmed after unloading into hoppers. This is followed by several hours of skin contact (cold soak), before pressing and alcoholic fermentation, which takes place very slowly in stainless steel tanks at temperatures below 17°C.

A bright, straw-yellow wine. True to the Verdejo variety, it shows an intense aromatic nose, with notes of tropical fruit alongside hints of fennel and fresh herbs.

Food pairing

Food Pairing

This crisp, aromatic Verdejo is wonderfully versatile at the table. Its lively acidity and fresh character make it an excellent match for:

  • Fish: particularly grilled or baked white fish such as sea bass or hake
  • Seafood: prawns, mussels, oysters and other shellfish
  • Rice dishes: seafood paella or other rice-based dishes with a light, savoury profile
  • Aperitifs: ideal as a pre-dinner drink, served well chilled on its own
  • Salads: fresh green salads, especially those with citrus or herb dressings
  • Soft cheeses: creamy, mild cheeses that complement the wine's fruity, floral notes

Serve chilled, at around 8–10°C, to fully enjoy its fresh, aromatic character.
