Albariño cold maceration (10ºC). Fermentation in a 2.500 litre French oak barrel. Ageing on the lees for three months in oak, with batonnage. Blending with the other two varieties (caíño and loureiro). Ageing in stainless steel for another three months. Resting in the bottle for six months prior to distribution.
