Review

This Pedro Ximénez made by Bodega Callejuela is a wine of over 20 years matured by the 'solera and criadera' system of tiered casks. Released in 50 cl bottles, like the whole range of Callejuela old wines, it's an elegant and balanced wine that combines, as few PXs do, concentration with elegance.

In the glass it appears dark, with dense tears and aromas of raisins and yeasts. On the palate it's sweet, with dates and honey predominant overall, but also having the freshness of citrus fruits and laurel in the background. It finishes with hints of roasted coffee and elegant bitter touches.

Blue cheeses / Dark chocolate / Tiramisu

  • Bouquet:Nutmeg / Dried fruit and nuts / Dates / Dried peach strips
  • Mouth:Silky / Long finish / Good acidity / Piquant / Gingerbread

Francisco, father of the current managers, started at that time to buy vineyards in the Marco de Jerez region. In 1997, they moved to Pago del Hornillo, one of Sanlúcar's highest areas, a...
