Caldera is a red obtained with maceration on the skins for 15 days and spontaneous fermentation with only indigenous yeasts in small concrete barrels, without the use of chemical additives and oenological adjuvants, with the exception of a modest amount of sulphites during the bottling phase. Ages 18 months in steel and cement.
Purplish in color with garnet reflections, the nose recalls it is volcanic, mineral, citrusy, sulphurous, with fruity notes of cherries still young in alcohol. In the mouth it is gentle, vinous, with character and compact, with beautiful tannins and fragrant and balanced acidity.
