The wine

This is a carefully-crafted wine resulting from Eben Sadie's quest to produce a blended red that expresses its terroir to perfection and thus provides a sense of place. Predominantly Syrah, with some Mourvedre and a dash of Grenache, the wine reflects the attention to detail that makes it original and highly individual: low yields, grapes hand-harvested into small crates, then de-stemmed into 4,800 litre open wooden and concrete fermenters. Natural yeasts take over in the fermentation process, followed by a couple of weeks of maceration, before pressing in a small hand-operated basket press. Ageing occurs in 500 and 600 litre oak casks over a period of 24 months, with the first 18 months on the lees and, after racking, a further 6 months on the lees completes the process.

Aromatic flavours abound in this wine, arising from the fruit, spicy elements and herbal characters. Fresh on the palate with plenty of body, it shows complexity and intensity: this is a wine to savour.
