"La Bota de" is a numbered series of wines from Jerez and Montilla, distinguished by their age and exceptional quality. These are wines of great complexity and finesse, matured in some of the region’s most prestigious bodegas. Run by Jesús Barquín and Eduardo Ojeda, two fervent admirers of distinctive fortified wine, Equipo Navazos carefully selects, reserves and then bottles the successive editions. Dated releases ensure that an outstanding array of the finest sherry is continually available to a growing number of appreciative consumers.
Edition number 9 of this series comes from the second release, extracted in October 2007(the first release was La Bota de Amontillado 1) drawn out of butts of Amontillado that the Sánchez Ayala family matured in their cellars, located in the old district of la Balsa, in Sanlúcar de Barrameda. This area, by the River Guadalquivir estuary, used to be surrounded by the fast-disappearing ‘navazos’, lands long cultivated by growers due to the high level of moisture just below the surface.
NOTE: Recommended to be served fairly cool, at about 12-14º, and allow the temperature to rise a little in the glass, but not to get above 18º.
Soupa and consommés, asparagus, artichokes, white meats, oily fish, mushrooms and semi-cured cheeses.
