The wine

Ardiles is made from 100% Viognier, a relatively new variety to the Priorat region, using young vines at present.

Gathered very carefully by hand at their point of optimum ripeness, the grapes are pressed gently and the juice transferred to a stainless steel tank that is kept strictly temperature-controlled. Once the wine has been fermented and cold stabilized, with special attention paid to the acidity and the pH level, it is clarified and bottled without time spent in barrel, nor undergoing malolactic fermentation. The production of Ardiles Viognier runs to a scant 1,000 bottles.

NOTE: Influenced by the bodega’s oenologists, Australian-born Don Lewis and Narelle King, and following the tendency among other wineries when bottling their young wines, Ardiles Viognier comes with a screw top.
