The wine
Chablis is an isolated island of vineyards in northern Burgundy, halfway between Dijon and Paris. Despite its enormous size and production, the Chablis area now produces less than 5% of what it did a hundred years ago.
Lower yields and improved winemaking practices have made this wine a favourite. Maison Louis Latour selects sections of vineyards within the Premier Cru appellations so that the quality of the fruit is guaranteed year after year. Chablis Premier Cru is a wine with more aroma and body than regular Chablis, due to its privileged location with good orientation and magnificent terroir. The wine becomes more rounded over the course of two to three years after harvest.
