The eponymous 2021 La Unidad is the top of the range, produced with a selection of specific vineyards in Cebreros in different zones: El Galayo, Villalba and El Arenal at some 950 meters above sea level on granite and schist soils. It fermented with 50% full clusters with indigenous yeasts in concrete and matured in a 2,000-liter oak vat for 14 months. This is a much more serious wine than the rest of the range, with a more traditional image. It is also elegant, clean and precise, aromatic, expressive and floral. It has a medium body with good ripeness and development of aromas and flavors, intense but weightless, with good depth and complexity. Very impressive. 6,000 bottles produced. It was bottled in December 2022.
