The wine

Tempus is a very personal wine, a measured combination of the qualities of local red grapes such as Carignan and Grenache, together with two of the famous French varieties, Merlot and Syrah. While Carignan brings character, freshness and depth, the other grapes give the wine its juicy, voluptuous and spicy features.

The grapes are cultivated from thirty-year-old vines in two small low-yield plots located in the town of Batea. They are harvested by hand and collected in small crates to keep them in the best conditions possible.

Tempus has an intense and dark cherry colour, an aspect which may lead us to think of a wine that has too much body or tannins, but it is not the case here. The winery's careful selection of grapes, well-timed maceration process, and excellent work controlling fermentation temperatures ensures the wine has all the elegance and aromas of the grape skins but without being excessively tannic. Its alcoholic strength is felt as the wine fills the mouth with pleasant and sweet liqueur sensations in the cheeks but is in no way overwhelming. Aromas of ripe blackcurrants, liquorice, pepper, nutmeg and cocoa delight the nose, while its mouth is deliciously juicy, yet fresh and lingering, leaving behind a very moreish memory of minerals and eucalyptus.

Thanks to the time spent ageing in French oak and standing in the bottle before its release, Tempus is ideal for pairing with red meat dishes seasoned with spices, or a well-cured cheese, strong enough to bring out all its qualities.
