Sparkling obtained through a second fermentation in the bottle with the natural sugar of the must. Grapes of the beautiful variety xarel·lo vermell of organic farming from a hillside planted in 1957. AA Capsigrany Natural arrives at the market without expedition liquor or added sulphites, with a yellow color dotted with pink and grayish tones, with a nose of flowers and grapefruits and a superbly structured mouth.

    Herzhafter Cava Ancestral aus Xarel·lo Vermell

    Alta Alella, das Weingut mit Meerblick kurz hinter Barcelona, verblüfft mit seinen Öko-Weinen. Forciert von Tochter Mireia Pujol-Busquets entstand 2015 „Celler de les Aus“, eine separate Kellerei nur für Naturweine. Aktuell gibt es davon 11, jeweils benannt nach heimischen Vögeln. Neben 2 Pét Nats und einem Vi Ambre sind vor allem die 3 Ancestral Cavas (ohne SO2-Zugabe) spannend. Der „AA Capsigrany 2017“ (Rotkopfwürger) aus der raren Rebsorte Pansa Rosada (Xarel·lo Vermell) ist eine Herausforderung: Honiggelb, feinperlig, lebendige Säure, sortentypische Bitternoten, würzig, herzhaft, rustikal.

    Súper cava rosé, bio, sans sulfites. Très agréable. Pas trop sucré comme c'est souvent le cas avec les rosés. Que demander de plus?
