Review

Villa Chiòpris is the other Friulian estate of the Livon family, famous for its extraordinary Collio wines. The estate is situated at the foot of the Eastern Friuli hills, on the edge of the great Friulian plain, where the DOC Friuli Grave: an alluvial and stony terroir that in a certain sense is reminiscent of the Bordeaux Graves. An area where the Adriatic and Alpine breezes are in harmony, creating, together with the minerality of the morainic amphitheatre of the hills, the best conditions for elegant, subtle wines with bewitching aromas. An ancient noble estate and then a military hospital, today Villa Chiòpris offers accommodation surrounded by endless rows of the most typical grapes of the Friulian vineyard, native and international at the same time.

Cultivated with the latest farming techniques, the Cabernet is one of the principles of this alluvial area. It is a steel-only Cabernet, where it stays for about eight months, then refines for a few months in the bottle before being sold. A Cabernet, therefore, which is crisp, frank and territorial, definitely just the thing for a carefree summer, perhaps slightly chilled.

Of a beautiful deep ruby red colour, it has a characteristic herbaceous aroma with notes of wild berries. All in a general picture of fragrance and panache, and with a vertical and mineral subtext crying out to be tasted. Which is consistent with the aroma. It has a fine, sapid consistency, excellent freshness and elegant, integrated and velvety tannins. With a strong body but still agile, it expresses a magnificent persistence that makes it useful and versatile at the table, from white meat to grilled red meat, from poultry to medium-aged cheeses.
