Review

Fagus is the top wine of the famous Coto de Hayas winery (Aragonese Wineries), an authentic reference in Aragonese wine from its properties in Fuendejalón, Zaragoza. It is made exclusively from a rigorous selection of Garnacha grapes of different payments, from the last three vintages.

The vineyards, between 40 and 50 years old, produce just one kilogram per strain, so the quality of the fruit is truly excellent. The perfect maturity point is harvested, usually around the first week of October. Its must ferments at a controlled temperature and in the presence of the skins for about two weeks, and then, after it has been converted into wine, perform malolactic fermentation in French oak barrels. Then, the transfer is carried out and covered in new French oak barrels in contact with their own lees. Once this process is finished, the best barrels are selected and their coupage is made, to finally proceed to bottling.

When we look at it in our glasses, it is easy to understand the magnitude of its charm. It shows an intense cherry red color with ruby tones and shines as if it were a true gemstone. In its elegant and intense nose the red fruit (plums and cherries) are mixed with the tones derived from the barrel, such as spices and coffee. After a few minutes in the glass, mineral and pastry souvenirs appear that round the aromatic profile of the wine and make it even more pleasant. In the mouth it is a fatty and voluminous wine, with a step of great balance and concentration. Its fine acidity drives it with agility through the palate while its round tannins cover the cheeks of a silky touch. Its end is long and stately and it is easy to find in it some suggestive memory of roasted meringue.

Terrific value - a real stunner

This is one of my favourite reds. It represents for me what is great about Spanish wines - it has great flavour, a fantastic nose and is really good value for money. Make sure you let it breath, preferably in a large wine glass, under-filled. It gets better and better. I first tasted it in a Spanish Michelin 3* restaurant - loved it then, love it now.

La primera vez que lo probé, en un menú degustación, me impresionó, asi que puedo decir por mi experiencia que acompaña muy bien con todo tipo de comida.

Fagus Crianza

Had this wine in a restaurant in London and really enjoyed it. Found it was available at Vinissimus so ordered some. Service was excellent, ordering process simple and delivery first class. So much so I ordered more.

Goloso

Es un vino al que le tengo mucho cariño ya que me recuerda una gran cena del año 2005, el gran Pitu Roca nos lo aconsejó para acompañar su menú degustación en El celler de Can Roca, si lo aconseja don Pitu...

Bodegas Aragonesas

Bodegas Aragonesas was founded in 1984 when several cooperatives in the Campo de Borja region decided to unite to market the wines they were producing. The intervening years have seen this winery grow in prestige and recognition globally due to their Coto de Hayas brand, their star variety Garnacha used in the production of many wines, often originating from extremely old grapevines, and the careful management of their extensive vineyards has not gone unnoticed either. They ...
