Raisin wine
Raisin wines are a type of sweet wine traditionally made in Mediterranean countries. In Spain we find delicious Raisin wines made from Pedro Ximénez and Muscat grapes in Andalucian regions, Malvasías in the Canaries and Garnachas on the Catalan coast. In France, there are the aromatic Vins de Paille. Whereas in Italy, Raisin wines have their own names: Passitos, Reciotos and Vin Santo. Aromatic varieties are the most often utilised in their production, and the grapes are left out in the sun to turn into raisins on drying mats or hung up in well-ventilated haylofts or indoor attics, always with the same aim: to dehydrate the berries in order to obtain raisins with a high concentration of sugar which will end up stopping fermentation in a totally natural way, thus becoming a naturally sweet wine.
