Bottle size and vintage
The project of the vintages is based on selecting musts that come from old vines of the Payments of Añina and Carrascal, which is fortified at 15º or 18º and left untouched to study where they evolve, spontaneously developing biological aging or aging oxidative, unlike traditional sherry wines, the aging system is not from "Solera and Criaderas", it is an exception since it is a wine of static aging, that is to say that in the corresponding year's harvest, must was selected yolk , which was alcoholized and over time spontaneously due to the presence of flower yeasts in the environment, the flower veil developed naturally and in the case of not developing the flower, oxidative aging began.

A wonderful rarity
A single vineyard, single vintage, no-solera sherry. A full blooded, pungent, salty wine, with a rounder mouthfeel than a traditional fino. It shape-shifted with every sip for three days. Splendid.by: Björn W (15/09/2019) - Vintage 2012
A different fino with a great taste.
This vintage fino really surprised me. A darker colour and a deeper taste than any other fino I have tasted. I will absolutely try to get some more bottles.
