The wine
Las Botas 11 and 12 give us the chance to discover two different styles in the production of pure Pedro Ximénez wines: one from Jerez (La Bota 11) and the other from Montilla. While Jerez wines mature leaving a sixth of the butt empty, in Montilla the wine undergoes ageing in a completely full butt and is fortified to a lower alcoholic strength than in Jerez.
La Bota 12 is the February 2008 release, bottled from the oldest PX solera in the Pérez Barquero cellars, and averages out at about 25 to 27 years old. This is a particularly sweet wine, with high acidity and low alcohol content. It will develop nicely in the bottle for years and will keep when opened, but it should be stored firmly closed.
NOTE: This wine will reach its full expression at around 18º, although it would probably be considered better on the palate served rather more chilled.
As a dessert wine, on its own or to accompany ice cream, sorbets or dark chocolate desserts.
