José Antonio Itarte and his wife Victoria bought the Cortijo Los Aguilares estate, which is located in Ronda, in 1999 and the following year they planted 19 hectares of vineyards with the Pinot Noir, Tempranillo, Merlot, Cabernet Sauvignon and Petit Verdot grape varieties. It is a young winery, but it has very clearly defined principles and the good fortune to count on the professionalism of Bibi García, a young oenologist with a lot of enthusiasm and knowledge.

Work in the vineyard is carried out according to guidelines based on integrated viticulture, with the utmost respect for the environment, without the use of pesticides or herbicides, and the bodega has a processing unit presently housing 11 stainless steel 10,000-litre tanks, an ageing cellar that measures 1,000 m2 and is located partly underground, with 160 French Allier oak barrels aged between 1 and 3 years old, where the matured wines rest for 8 to 14 months.

This winery's little gem is its single varietal Pinot Noir, which is a wine that takes you by surprise due to its excellent quality and personality, yet as a rule all their wines boast such a fine reputation that their stocks run out earlier than planned.
