Centennial vines, trained as sapling with a production of 30 hl / ha. The grapes, harvested in plastic baskets in the first ten days of October, first cooled by de-stemming, undergo a few hours maceration in the press. The refinement, in steel, on the fine lees, lasts until late spring.
