The wine

A long Charmat made from Pinot Noir and Chardonnay grapes, testifies to the vocation of experimenting the world of sparkling wine in various directions. On the occasion of the visit to Valdobbiadene of an illustrious personage, some friends turned to Giuliano in their search for a new, refined and very dry sparkling wine. For the skilled sparkling wine maker it was time to present a cuvée he had been working on for some time in order to obtain an Extra Brut. Thus was born "the sparkling wine of the reserve for the Governor". It was a success.

Here the aromas are more oriented to complexity than easy pleasure. The longer stay on the lees and the good structure show a deep and little shot aromatic profile. The olfactory sensations are gradually released from the wine and present an evolved character. The very dry and remarkably fresh mouth contrasts well with the opulence of frying both meat and fish.
