The slightly overripe grapes are harvested by hand and placed on cane racks where they remain in natural drying for about 3 months. In late December we proceed to the pressing; fermentation is stopped early to maintain a high sugar residue. In the spring, bottling takes place followed by a period of rest in the bottle for several months.
Intense ruby red with violet reflections, the nose is delicate and characteristic, fragrant, with a strong hint of morello cherry and berries. In the mouth it is sweet, velvety, full-bodied, harmonious, savory, with a taste of blackberry and berries.
