The wine

Enyo is the selection of the best Bellone grapes. Enyo is pure bellone, a native variety of the Cori area, it ages for a year in steel before being bottled; the peculiarity of this white wine is the light maceration on the skins and the permanence on the yeasts for malolactic fermentation. The name Enyo is a reference to Greek mythology and the goddess Bellona. Enyo has a straw yellow color with golden reflections, it is consistent and crystalline. The nose is dominated by a note of citrus with zest, vegetal nuances and mineral tones: the maximum expression of our territory. There is no lack of fruity notes of ripe melon and yellow peach. A citrusy entrance, fully consistent with the sense of smell, which continues with an enveloping pseudocaloric note. A hint of ripe fruit and a long savory persistence follows. Eclectic wine, fresh but with a full and decisive body, to be combined with fish soups, grilled swordfish and white meats.
