The wine

Founded in 2004 by a team of winegrowers fascinated by the potential of the DO Bullas appellation, Bodega Lavia creates quality wines using their own organically-cultivated vines planted in the vicinity of the winery. With the utmost care and respect for the environment, the winery strives for excellent balance in their vineyards and the maximum expression in their wines, ensuring they express all the qualities of the soil and the characteristics of a Mediterranean climate with continental influences. And all this starting out from Monastrell, the local grape variety which is the authentic star of all their wines.

 

What does this wine taste like?

Displaying a medium-depth seductive cherry colour, Lavia Plus has a delightfully intense nose where fruits of the forest mix with refreshing herbal hints of eucalyptus, lavender, and spices (pepper, cloves and cinnamon). It also transmits an intense mineral sensation reminiscent of dust on stony paths, rounded off with floral fragrances of violets. Juicy and fresh in the mouth, like the juice of ripe wild fruit. Altitude (750 metres) and perfect ripeness create a magnificent acidity allowing the wine to elegantly combine the best of its fruit with the toasted tones of well-integrated wood over a background of coffee and a creamy mouthfeel. The fruit loses a little tension with time in the glass and becomes more reminiscent of strawberries and red plums. Floral and bay leaf notes add to an elegant and well-balanced tannicity in which freshness plays a key role. The perfect combination of power and elegance lead up to a lingering bitter finish which invites us to take another sip.

Drinking and storing

Best served at 16ºC in a Syrah wine glass with a high bowl to enjoy the best expression of the wine.

Ready to be enjoyed now but the precision and hard work put in by Bodegas Lavia, and the wine's lively acidity, indicate it has a promising future and can be laid down for as long as 6 or 7 years after its vintage.

Serve between 15ºC and 17ºC

Food pairing

Pairs excellently with any grilled red meat finely seasoned with Mediterranean herbs and spices.

Vintage:

Winemaking

100% organic Monastrell, collected by hand in October. The grapes are selected twice, destemmed and pressed and the free-run must collected in deposits. It ferments with local yeasts in a 100 hectolitre wooden tank at controlled temperatures. Regularly stirring and pump-overs. 18-day maceration. Malolactic fermentation in wooden deposits and 12 months ageing in 500-litre French oak barrels.
