The wine
The oldest solera of sweet Pedro Ximenez at Bodegas Rey Fernando de Castilla comprises some 30 butts which demonstrate the definite Jerez style, decidedly oxidative, although with an alcohol level that places it within the 15% minimum limit. This moderate alcohol content helps to preserve the notes of candied fruit originating from the dried-out grapes, despite the wine being a considerable age and undoubtedly exceeding 30 years old.
During a properly executed tasting, the marked differences in this solera’s butts can be appreciated. Ably assisted by our friends at Fernando de Castilla, we noted the ones that in our opinion showed more depth and cleanness, which were excluded from regular extractions of the bodega’s old PX (resulting in this edition being identified as a “Bota No.”) and consequently were reserved for the current edition, No. 36 in the series, of La Bota de Pedro Ximénez.
Matured using the traditional system of soleras and criaderas (tiers of casks). “Bota No.”, a newly-bottled release, extracted in June 2012.
