The wine

The lands belonging to the Fèlsina winery comprise up to 600 ha of vineyards, olive groves, woods and other cereal crops, vegetables and sunflowers. At one time a farm owned by the Grand Dukes of Tuscany, it was a place especially dedicated to growing olives with hardly any hectares given over to vines, but in the last 50 years Fèlsina has turned it into one of the most important wineries in the production of Sangiovese variety wines.

Fèlsina is a typical but, in other ways, atypical Vin Santo. Typical because the production chain is the historical one, with the withering in the drying room until December or January-February and then, after slow pressing, gradual fermentation and ageing in small sealed 100-litre barrels exposed for seven years in the storage rooms to the climatic conditions of the seasons.

Atypical because, in contrast to tradition, Fèlsina transgresses the custom of reserving only white grapes for Vin Santo, channelling the red ones only into the Occhio di Pernice type. The Vin Santo di Fèlsina, therefore, has a small amount of Sangiovese, which gives the product elegance, structure, austerity and colour, with a drop of tannin.

The vineyard, which naturally produces the grapes of Tuscan trebbiano and long white malvasia typical of the prevalence of the blend, is located in Valli and Poggiolo in Castelnuovo Berardenga, considered one of the best crus of Chianti Classico. A tribute to the best Tuscan tradition, such as the practice of ageing Vin Santo in kegs impregnated with the "mother", a dense residue of wine and yeasts from previous years.

Fèlsina is therefore the place of a golden Vin Santo with warm amber reflections. The bouquet is intense and very persistent. Precise and well defined with excellent balance, it gives off seductive aromas of raisins, candied fruit, nuts, honey, peach, apricot, pineapple and tropical fruits. The palate tastes the consistency, softness and elegance of the fruit which is well integrated into the wood of the keg. A wine of great balance with a nice well harmonised acidic note and a right residual sugar, with a slightly smoky spicy finish. Excellent drunk slowly, paired with dry biscuits and serious cheeses.
