The wine

40% Xarel·lo, 39% Macabeo, 15% Parellada and, in the latest vintage, 6% Malvasia de Sitges. They all express the typicity of their terroir thanks to the exceptional soils of Raventós i Blanc vineyards.

What does this wine taste like?

Brioche, nuts and dried fruit appear first, followed by aromas of apple as we approach the glass a second time. Wonderful aromas of candied citrus peel appear after a few minutes.

A creamy mouthfeel with fine bubbles provides a perfect mousse sensation.

Eighteen months on its lees produce delicious fragrances and tactile sensations which evoke thoughts of a short ageing in process in wood.

Malvasia de Sitges is a complicated variety to grow but delightful to work with in the winemaking process. It adds a high level of natural acidity to the classic Catalan coupage, as well as strength and aromatic complexity.

Winemaking

Hand harvested and gravity fed in the winery in temperatures controlled by the use of dry ice. Slow pressing and static racking at low temperatures. Varieties and soil types are first fermented separately in stainless steel tanks at controlled temperatures. They are then blended before undergoing a second fermentation and an ageing process of at least 18 months in the bottle before the dosage is added, made from the same base wine and sugars. The disgorging or degüelle date is given on the label.

Ageing period18 months

Vineyards

Vinya del Llac

Biodynamic winegrowing. Vineyards with a natural vegetation covering generate biodiversity, fertility, and soil life. Fertilizer from the winery’s own animals is used and plant-based infusions as phytotherapy to reduce the use of products like copper sulphate and sulphur.

The Vinya del Llac plot, home to the Xarel·lo grapes, was planted between 1974 and 1990. Its clay soils over limestone bedrock are north-facing.

The Macabeo grapes grow in the La Plana vineyard. The lowest altitude plot (135-151 metres) boasts flat north-facing deep chalky soils with a clay loam texture from the sediments deposited by the river Anoia.

Parellada grapes thrive in the Les Barberes and Les Oliveres south-facing plots at altitudes between 157 and 179 metres. Their characteristic marine-origin soils date back to the Miocene period.

The Malvasía de Sitges vines grow in a small 1.5 hectare plot called Viña de la Plana.

Raventós i Blanc

Raventós i Blanc

Raventós i Blanc is virtually a synonym of traditional and family-run winemaking. The farm where their wines are made has belonged to the Raventós family since 1497. Twenty-one generations have lived and worked here among spectacular vineyards and woodland, located in Sant Sadurní d'Anoia, the sparkling wine capital of Catalonia. The family keep records certifying that they were already making wine here for home consumption and selling must to other winemakers...
