Who was it that said in Italy they only made trattoria and pizzeria-type sparkling wines? They shouldn’t be hidden away - those well-known and undervalued Lambruscos that many people say they’ve never even bothered trying. But, fortunately, Italy isn’t just about Lambrusco: there’s much more to it than that. The sparkling wines from the Venice region are an obvious example, following the traditional rules of the Champenoise method under the Controlled Denomination of Origin of Prosseco di Valdobbiane.

Among the various ranges on offer, we have selected Foss Marai Cuvée Brut for the originality and excellent quality offered at a competitive price in the Italian sparkling wine market. It stands out most distinctively from the rest of the ‘Champagne method’ sparkling wines made world-wide. The aromatic palette abounds with notes of countryside flowers and white and yellow stone tropical fruits; peach, passion fruit, kiwi and pear, typifying the Sauvignon Blanc variety used in vinification. All set for tasting Foss Marai, we readily recall the aromas of Alsace wines made with Pinot Blanc grapes.

This is a perfect Prosseco to drink as an aperitif, since on the palate there is a generous amount of liqueur d’expedition (10 grams/litre of sugar) and a light but racy texture. A pervasive feeling of freshness and menthol appears to make the wine pass through the mouth so fleetingly; gone in a flash...

Firmly rooted in the small town of Olesa de Bonesvalls, right in the heart of the Garraf Massif, Raimon Badell produces one of the Penedés district’s most traditionally crafted Cavas, in his capacity as oenologist and owner. The name ‘Vall Dolina’ refers to the relief formed by the valleys or depressions in the land known as dolinas.

The Bodega Can Tutusaus only produces wines that have undergone ecological farming methods on poor soils of reddish clay and limestone, typical of those found in the Garraf. Not many bottles are produced (just 20,000), meaning they are one of the few that can still carry out manual disgorging without freezing the sediment, in the purest traditional style. It is quite incredible to watch it happening.

We have chosen the Vall Dolina Reserva Brut Nature as this is a Cava perfect in quality and structure, which many other, considerably more expensive, Cavas would love to emulate. Vall Dolina Reserva Brut Nature has the usual trio of Cava components with a touch of Chardonnay to add structure and vinosity. Light, tertiary aromas, rich in toasty notes, bitter almonds and confectioner’s custard. As a relatively young vintage, compared with other Cavas, its elegance is truly delightful and well rewarded by the acidity and dryness of the Brut Nature. The carbonic element has been handled properly, which has resulted in a most appealing Cava that holds up perfectly, with a final touch of real minerality coming through from marine fossils to linger on the palate.
