The wine
The method of production for this sparkling wine is similar to many a white wine and carried out traditionally, with fermentation in tank. Afterwards, blending of the different base wines occurs, which in this case consists of 70% Sémillon, 20% Cabernet Franc and 10% Muscadelle.
It is at the time of adding the liqueur de tirage, a mixture of yeast and sugar, that a second fermentation in bottle is brought on, which is responsible for the bubbles. The bottles rest in cellar for 18 months, while the wine matures and gains in complexity on its own lees. Once disgorged, the secret liqueur d'expedition is then added.
